Vegan Legume Rice

Ingredients

  • Rice shaped legumes-available from scoop
  • 1carrot
  • 1courgette
  • 100 grms cauliflower
  • 1red pepper
  • 1leek
  • 1lemon
  • 3-4 tbls olive oil
  • 3tbls chopped parsley
  • Salt and pepper

Method

  1. Cut up vegetables and lightly steam for two/three minutes.
  2. Bring to the boil a large pan of boiling water, lightly salted.
  3. Pour in the rice legume, give it a stir and cook for 3-4 minutes, drain and run under cold water.
  4. In a sauté pan put a little olive oil and sauté the steamed vegetables for two minutes.
  5. Add this to the rice legume, add chopped parsley, lemon juice and chopped parsley. Season well and serve.
