Founded in 2022 by Winston Brown and his family, after much trial and error, The Shetland Oyster Company is the latest addition to Shetland’s superb seafood menu.
They already have half a million native and Pacific oysters growing to maturity in the pristine waters of Weisdale Voe. These oysters hopefully be ready by the time the Tall Ships arrive in Shetland this summer.
Their goal is to have a customer in a Lerwick restaurant eat an oyster a couple of hours after it has come out of the water. Shetland is obviously quite a small marketplace, so exporting oysters is also very much part of the plan. However, their first priority will always be quality.
