International Kitchen 2023 - Mel's Chicken Adoba
Ingredients
- 750g chicken thigh fillets boneless skinless
- 3 garlic cloves finely chopped
- 1/3 cup soy sauce
- Thumb size ginger finely chopped
- 1/3 cup wine vinegar
- 4 bay leaves
- 1 teaspoon black pepper
- 2 tablespoon vegetable oil
- 3 garlic cloves chopped
- 3 shallots finely chopped
- 1 ½ cups water
- 2 tablespoon brown sugar
- 2 teaspoon black pepper
Method
- Combine chicken and marinade ingredients in a big bowl. Marinate at least 20 minutes or up to overnight.
- Separate chicken from marinade (keep marinade). Heat 1 tablespoon of oil in a skillet over high heat. Sear both side of the chicken until browned, about minute each side. Do not cook chicken all the way through. Set aside.
- Heat the remaining oil in skillet. Add garlic, shallots. Cook for 2 minutes.
- Add the reserved marinade, sugar and black pepper. Bring it to simmer then turn heat down to medium high. Simmer 5 minutes.
- Add chicken. Simmer uncovered for 20-25 minutes or until the sauce reduces to thick jam like syrup.
- Serve with steamed rice and garnish with chopped spring onion.
