Mary's Florentines
Ingredients
- 90g Flaked Almonds
- 30g Cornflakes
- 60g Raisins
- 60g Chopped Glace Cherries
- 30g Chopped Pistachios
- 45g Shetland Farm Dairies Butter
- 1 tablespoon Pure Shetland Honey
- 1 tablespoon Plain Flour
- A Pinch of Shetland Salt
- 40g Caster Sugar
For topping/coating biscuits
- 75g The Chocolate Box White Caramelised White Chocolate with Sea Salt (melted)
Or
- 75g Island Larder Dark Belgian Chocolate (melted)
Method
- Mix togeher almonds, cornflakes, raisins, cherries and pistachios ans set aside.
- Mix butter, sugar, honey and flour in a saucepan over a low heat until sugar dissolves.
- Mix with dry ingredients.
- Divide into lined muffin tins, but don't press too hard!
- Bake in oven until golden - 160 C for 16 mins.
- Allow to cool in tin.
- Melt chocolate and dip bases of cookies in, then sit them upside down on a tray in the fridge to set.
