The Great Shetland Bake Off - Week 1 - Becky's Huffsie

The Great Shetland Bake Off - Week One - Becky makes this traditional Whalsay Huffsie. With special thanks to Alison Tulloch for sharing her grandmother, Jess Poleson's recipe.

Huffsie

Ingredients

Boiling Mixture

1 cup of water

2 cups of raisins/sultanas or a mixture

4oz Butter

1 tsp bicarbonate of soda

Cold Ingredients

2 beaten eggs

2 cups self-raising flour

1 tsp mixed spice

2 tbsp treacle


Method

Add all the boiling mixture ingredients to a pan.

Bring to the boil, then simmer for at least 15 minutes.

Allow to cool to little above room temperature.

Add spice to flour, treacle to beaten eggs then combine all.

Add cooled, simmered fruit to the mixture and stir well.

Spoon into greased loaf tin.

“This should go into a moderately hot oven for at least half an hour before you turn off the heat and leave the huffsie in the cooling oven for at least another half hour.

Try the Makkin Wire Test at this point, and if it comes out aggled, give the oven more heat for a bit until a clean wire says the cooking is complete.”

I cooked mine in a 2lb loaf tin at 150C for 50 minutes.
